Salmon, miso and yuzu soba noodles

If you're looking for a dinner that's big on flavour but super healthy, this salmon is going to become your new favourite. Its simple to throw together, full of protein, and has a tangy delicious Japanese dressing made of miso, orange, soy and yuzu. The hot salmon with cold noodles sounds strange but really works. You can also make it with hot soba and veggies as well.


Salmon with miso yuzu soba noodles

serves 2


2 chunky pieces salmon fillets

1 tbsp soy sauce

1 tsp honey


150g soba noodles

150g green vegetables like broccoli, edamame or asparagus

1 tbsp togarashi chili or regular chili flakes

2 kumquats, sliced (optional or add a few orange segments)

1 thumb sized red chili sliced

small bunch chives finely sliced


Dressing

2 tbsp light miso paste

3 tbsp Japanese soy sauce

1 tbsp mirin

1 tbsp rice vinegar

3 tbsps yuzu juice

2 tbsps orange juice

1 clove garlic grated

1 tbsp chili sauce (sriratcha or other kind)

1 tbsp honey

1 shallot finely chopped


  1.  In a small bowl add the dressing ingredients and whisk together. 

  2. Boil the vegetable until al dente and then drain.  Rinse with cold water and set aside.

  3. Add the soba noodles to boiling water and cooking until al dente.  Drain and rinse in cold water.  

  4. Preheat your oven grill/broiler. Place the rack to the highest it go under the heat. Arrange the salmon on a baking sheet lined with foil.  Drizzle the honey and soy over and cook under the grill for 3-4 minutes.  It will seem underdone when you take it out but wrap the foil around it and let it sit for 3-4 minutes.  It will finish cooking and stay juicy.  

  5. Place the vegetables in two bowls.  Top with a soba noodles and a piece of salmon.  Pour the dressing over and sprinkle the chives, chilis, kumquats (or orange pieces) and a little togarashi chili spice. Enjoy.
